Tokinoka Black is a blended whisky created by Akito Ueda, Master Blender of White Oak distillery, who gives us a new version of Tokinoka the blend emblem of the brand. Its rather more fruity nose with aromas of tropical fruits and notes of toasted oak, precedes an appealing mouth experience with the appearance of woody aromas and some notes of citrus. Made from 50% malt whisky and 50% grain whisky aged in 3 different types of casks (Bourbon, Xeres and new oak), this version richer in malt presents a very nice roundness in the mouth and combines at the same time a spicy and creamy sharp side, with a soft and vanilla finish characteristic of Tokinoka.

White Oak Akashi Blend $18/$32 40% ABV

Akashi whisky is the only whisky in the world that is made by a Toji (grand-master in the art of sake making) by implementing sake-making methodologies into the whisky making process. The distil pot used is smaller than those used by both Scottish and other Japanese distilleries, which in turn, decreases the levels of fusel alcohol. As a result, Akashi whisky does not require as long of an ageing process, while its core malt (cask strength) is smooth and delicate. This is whisky blended in the scotch tradition, with Japanese precision, the malt is lightly peated, and vatting is mostly ex-bourbon, balanced by White Oak’s unique variety of barrels.

Akashi White Oak is a blended whisky reserved in Japanese Shochu cask (American Oak) for 3 years, aged in ex-bourbon casks before finishing in ex-sherry casks for 2 years.

Colour: Orange amber gold

Nose: Malty, citrusy aroma with scents of black cherry, toffee and oak.

Taste: Notes of vanilla and pine nuts dominate the palate, and lead to a long, malty finish.

Togouchi Premium Blended Japanese Whisky $17/$30 40% ABV

Togouchi is a blended Japanese whisky from the producers Chugoku Jozo, who mature their whisky in a tunnel rather than a warehouse. The name comes from where the tunnel is located, in the town of Togouchi, which merged with two other towns to create a larger town called Akiota. They utilize an old railway tunnel that maintains cool temperatures regardless of the season, allowing the whisky to slowly mature over time.In these natural environments, the casks are allowed to slowly breathe over time, resulting in the beautiful golden color, unique aroma, and refined taste of TOGOUCHI blended whisky.

Color: light golden color

Nose: It has a youthful aroma, but a slight peaty aroma can be noticed followed by sweet honey, nuts and corn flakes.

Palate: It’s has a light and mild taste. A sweet aroma that reminds you of grains and honey gives you a mellow feeling.

Finish: The slightly peaty aroma dominates the aftertaste.

Japan- This whiskey is distilled from malted grain and mash corn, on Honshu Island, before resting in oak barrels. It has floral aromas with caramel and spice notes, as well as a palate consisting of generous oak and cooked fruit. It finishes with a hint of smokiness.

Komasa Kozuru Kuro (Sweet potato) Shochu $11/$19 25% ABV

Made with 100% carefully selected sweet potatoes which out contracted farmers made. And also "black koji" is used in fermentation for an exceptionally aromatic and smooth shochu. All natural ingredients. No additives. Region: Kagoshima

So what’s it like? Thanks to the black koji, it has the distinct earthy nose we expect, but this is unexpectedly accompanied by a maple syrup aroma. It’s forwardly sweet, almost molasses like with a round, rich mouthfeel. An unexpected roasted caramel finish completes the package.

Unlike other black koji imo shochus, which can be dirty and dry, Kozuru is a rich sweet, delicious shochu that might be best served straight

Tokachi Brandy Hokkaido 30 year old $30 1oz 40% ABV

On the nose, this Brandy has rich aromas of ripe fruits such as apple, prune, and banana, with subtle note of a fine cigar. Matured for more than 30 years in oak barrels, the complexity of the nose is guaranteed by elegant and mellow aromas.

The flavours on the palate is round, and it has exquisitely balanced delicate sweetness and moderate bitterness. The finish is beautifully soft which lingers for a long time, while expressing superb aromas through the nose.
